Work from Home Meal Plan 4

So, for the most part, this has been a lot of fun. We’ve had a jam packed couple of weeks that’s limited my cooking time as well as my personal writing time (and even Black Moth Radio time). 

Saturday – Loaded Twice Baked Potato Casserole

You can find the original recipe here on the Spend with Pennies website. When we came across this recipe, I was actually trying to find one I read that included chicken…but Bull found this one earlier today and since we don’t watch our carbs quite as close on the weekend…yeah!

Key Changes: We used Idaho potatoes instead of red potatoes.

Bull’s Verdict: Good, but seemed like it was more a side dish than a main dish.

Robin’s Verdict: It was good. It was kinda thick, but then again…I ran out of butter.

Sunday, Monday, and Tuesday – You’re on Your Own!

Okay, so not totally…but we’ve been crazy busy between Bull’s practice for BJJ and work along with my own work and other obligations. Hell, I can’t even remember what we did for dinner Sunday…or Monday (but I know we ate). Tuesday we did burritos, but no special recipe.

Wednesday – Frozen Lasagna

It was one of those nights…the day was incredibly long. It was on sale. So, that happened. And I do not fucking regret it.

Thursday – Slow Cooker Salisbury Steak

You can find the original recipe here. I vaguely recall making this about two years ago…same weekend that my youngest nephew was born. I think I made it in the oven, though. But…two years ago…

Key Changes: No mushrooms. Dan Bull the Anvil (on Instagram!) doesn’t like them. I will double this recipe. Although we live in the midwest, beef is kind of expensive so we don’t buy it very often (I’m sure you’ve all noticed a theme of chicken and pork for most recipes).

Bull’s Verdict: I love this recipe.

Robin’s Verdict: I love that this is a crockpot recipe. I have shit to do. I love brown gravy. What I really love is that you don’t make your own brown gravy (which is good because I suck at making gravy)…you just use the stuff in a package. I love, love, love this recipe. It is so tasty (even without the mushrooms).

Friday – Surprise! Dinner Out

Bull decided to surprise me and take me out to dinner.

Saturday – Honey Garlic Chicken with Rosemary 

So, after nine hours of editing and rewriting a computer aided legal research lesson for paralegals (which was essentially taking a really old course my client had and updating it from the old LexisNexis to the new, improved, and wayyyy easier to use Lexis Advance), I was pretty sure my eyes would melt out of my head. I’m tired. I’m hungry. I’m making honey garlic chicken with rosemary. It’s just me and Baby Bull tonight. Hopefully there will be leftovers for Bull to try or his verdict will be him complaining that he didn’t get any.

Did I mention I still have public records to read and summarize, an ebook to write, and a website to finish updating? No? Yeah. Oh, and some law firm web content, too.

Key Changes: I am using boneless, skinless chicken bewbs instead of thighs.

Bull’s Verdict: I should have just written down my recipe for it. Because this is awful with rosemary. I had to go to Taco Bell to feed my wife…

Robin’s Verdict: Baby Bull likes it. I think it’s fucking disgusting. Honey and rosemary? Awful.

Sunday – Secret Ingredient Beef and Broccoli

Key Changes: I had to make hoisin sauce because we couldn’t find any in the store. I used this recipe. Also, we didn’t use flank steak. Bull found a five pound roast on sale so…it’s in the crockpot along with the marinade from the beef and broccoli recipe. Obviously, I had to increase the amount of the marinade to match the weight of the roast. My plan is to shred the roast when it is cooked. Then, I’ll transfer it to a wok with the broccoli and mix up the sauce from the recipe and cook them together for a bit.

Bull’s Verdict: Really good.

Robin’s Verdict: I liked this way more than I expected. I have a very sensitive nose…and while it was cooking, all I could smell was the oyster sauce (the secret ingredient), but I couldn’t taste it. It was amazing. Definitely a keeper.

Monday – Sweet Maple BBQ Chicken Kabobs

I kinda feel like pretty much anything we find on A Dash of Sanity will be amazing…but…hey, you can find the original recipe here.

Key Changes: We didn’t buy kabob sticks. We just mixed up the marinade, let the chicken sit in it a while, and tossed it in the oven. The grill would be great, but Bull and I are both sick…so is Baby Bull (and eight year olds shouldn’t use a grill anyway). Even the 17 year old is sick.

Bull’s Verdict: I like it. It’s really good.

Robin’s Verdict: So, when I mixed it up, all I could smell was ketchup. But…like I told you guys about yesterday’s recipe…I have a very sensitive nose. I hope it tastes better than it smells. Of course, I thought the same thing about yesterday’s recipe, too… I think it would be better if we would have grilled it.

Total spent in groceries: $75.00 (including the frozen lasagna)
